Syrinki (Russian cottage cheese cake )

Hello folk, if you are looking for something unique to eat in breakfast than you are at right place. Today,  I'm gonna share one of the delicious and fluffy pancake alternative to your usual pancakes. All of my friends  are  aware of my love to explore world cuisines and make at home. Last week, in brunch  this Syrniki , Russian cottage cheese pancakes which are slightly sweet , cheesy and are super soft along with banana sauce, held my guests spellbound. These sweet cottage cheese pancake are really delicious and filling. Serve these with syrup like traditional American pancakes, or with a dollop of sour cream, Greek yogurt and a spoonful of fruit preserves or with banana sauce. 

 



These pillowy cottage cheese pancakes of cheesy goodness are just so delicious and it's very  quick and simple to make. It makes a wholesome snack box for kids school or even an after school snack , or you can add this in breakfast table for guests.




A few tips for making Syrniki is the batter, which will be much thicker than American pancake batter, it will be more like dough.

 

        Introductions

        250 grams Paneer (homemade cottage cheese)
        2 eggs
        1/4 cup  sugar
        1/2 teaspoon salt
        1 teaspoon vanilla extract
        1 cup all purpose flour (Maida)
        1/2 teaspoon baking powder
        1/2 cup all purpose flour for dusting 
       Butter / vegetable oil as required for pan frying. 

Method :

First prepare the paneer  (cottage cheese) at home or buy fresh one and keep aside. 

Mix flour, baking power and salt. Set aside.

In a large bowl, knead the cottage cheese until you get smooth texture. than mix it with eggs, sugar and vanilla extract. Now add the dry flour ingredients and stir it with a spatula until combined well. The mixture will be very sticky. 


Take a lemon size ball of dough, flatten the side of the ball to get a cube-shaped pancake. 

Now with the help of butter knife sharpen the edges of the pancakes and rub it into  flour on all the sides and shake off extra flour. Repeat the same process with the remaining dough. 


 Heat a non stick pan and add butter and gently put Syrniki into the pan. Cook for about 2 minutes each side, till all the sides are golden brown and cooked properly. At this point you can gently prick a tooth pick to check if it is cooked well from inside or     not. 

Now transfer all the Syrnkis into a plate and dust it with powdered sugar and serve it hot, as it will not taste that good once it cools down.
