Chicken with herbs

I love anything that cooked with herbs, My recipe of chicken with herbs will definetly become a family favorite. Simply blend together handful of herbs with onion, lime juice, and pepper. 

The marinade pairs well with just about every protein imaginable, and it works great as  a sauce for grilled meats or fish. This recipe can be baked on a rack in the oven or cooked on a grill for an easy weekend dinner.


Ingredients

1 kg Chicken drumsticks or thighs
1 cup cilantro leaves and stems
1 cup mint leaves
1/2 cup curry leaves
1 onion
4-5 cloves of garlic
3-4 green chilies
2  tablespoons lime juice
1 tablespoon black pepper
Salt to taste
1 tablespoon honey

Procedure

Make the marinade by combining cilantro, mint, curry leaves, onion, garlic, chilies, lime juice, black pepper in a blender and puree until smooth.

Add honey and salt to taste. Marinate the chicken pieces with this puree and keep in fridge for at least  4-5 hours.

Preheat oven at 250 degree C. Now roast chicken pieces on a wire rack for 35 to 45 minutes at 200 degree C. Start with skin - side down, and flip skin-side up at the 20 minute mark. 



       Serve the chicken with lime wedges.
