Beetroot Bites

Hey folks, let's go for veggie bites today !!



One of my favorite recipe is here, these are decadent and beautiful at look, but secretly so easy to make. Winter is here and its a season of different veggies and fruits, so naturally this weather is a cause for celebration. So, I decided to make few colorful and light beet root bites - perfect for the blooming season. To get the full benefit in real , it's best to eat beets raw as they tend to lose valuable pigments as the cooking time increases. But I like to present cooked one in party because everyone doesn't like the raw taste of beets. 




Homemade beet root bites may seem daunting, but it's actually quite easy. As for the filling, you can go for both smooth dairy free or cream cheese . They are more of an appetizer than a main course, so I'd suggest serving them with a large salad on the side, you 'll fall in love with this Mediterranean inspired meal.






Ingredients:

2 Beets, big in size.
1 cup almonds, soaked for few hours or overnight in water. 
2 tablespoons pumpkin seeds.
2 tablespoons walnut, chopped
2 peeled garlic cloves
2 tablespoons fresh parsley, finely minced 
2 tablespoons finely minced red onion
2 tablespoons fresh lemon juice
Salt and pepper to taste

Methods:

Boil beetroots in water with salt until it is tender. Once cooked, let it cooled down, peel the skin and slice the beet as thin as possible on a mandolin slicer or bu using sharp knife. 
To make filling: Blend almonds, pumpkin seeds and garlic in a blender, until you get smooth texture. Transfer in a bowl, add minced red onion, lemon juice, chopped walnuts, minced parsley  and adjust according to taste, adding more salt and pepper. Mix it well. Keep aside. 

Scoop 1 tablespoon of filling mixture onto half of a beet root slice and fold the other half over the filling. It will hold itself in place. Sprinkle parsley or choice of your nuts on top and let your guests enjoy in your party !!
