Olive and thyme savory cookies

These olive and thyme cookies are an uniquely delicious savory cookies that  is perfect as an appetiser, on your cheese board , or even as an edible gift. The dough can be made ahead  of time and frozen for later. 




These savoury cookies are just as amazing as they sound and they are great as a party appetiser or even for your cheeseboard.





Ingredients :

2 cups all-purpose flour 
1/2 cup semolina 
1 teaspoon sugar
1 1/2 teaspoons baking powder
1 teaspoon salt 
1/2 teaspoon baking soda 
1 tablespoon fresh or dried thymes
1/2 teaspoon red chilli flakes
1/2 cup chilled butter or margarine cut into small pieces
1 cup  yoghurt 
10-12 black or green olives

Method :

Pre-heat oven at 200°C

Combine flour, semolina and other ingredients in a bowl, cut in butter with knives until the mixture resembles course meal.  ( Flour mixture and butter can also be combine in a food processor, pulse Until mixture resembles coarse meal) . Add olives and yogurt, stir just until moist .

Turn dough out onto a heavily floured surface , knead lightly 5 times. Roll the dough to a 1/2 inch thickness , cut with a 2 1/2 inch biscuit cutter. Place on a baking sheet coated with cooking spray. Bake at 200 degree  celsius for 15 minutes or until golden brown. 

Cookies are ready to serve.
