Steamed Rice Cake ( Assamese recipe)

It must have been more than two years since I last sink my teeth into a piece of ‘Pani Pitha’ , steamed rice cake. I grew up eating tons of this soft and chewy cake.






Of course, living far away from your home I have no access to this. But at last , I have managed to recreate this favourite childhood cake of mine with a little twist. This super easy and healthy rice cake recipe that you will love once you made it. 



All of you are quite familiar with Chinese steamed rice cake,  but I’m pretty much sure that this steamed rice cake of Assamese community is hardly known to anyone out of Assam. Today I tried our own traditional  steamed rice cake by using butterfly blue pea flower colour to give an exotic look , so that you can offer this to your guests at home next time. This steamed rice cake have a slight chewy texture and made with just two ingredients which are always in our pantry. 

Ingredients: 

2 cups rice flour
1/2 cup grated coconut or powder
1 cup water ( boil with butterfly blue pea flower , strain it and keep aside.
1 cup normal water 
2 tablespoons sugar ( optional ) 
1/2 teaspoon salt 
Grease a pan or dish with butter/ refined oil 


Method : 

Bring water to boil in a large pan over high flame . 

In a bowl mix 1 1/2 cups rice flour with butterfly blue pea flower water , add salt and make a batter like pancake. Add 2 tablespoons sugar if you want to make it sweet. 

In another bowl mix 1/2 cup rice flour , freshly grated coconut with water. Make a batter like pancake . Add more water if needed. 

In a greased pan or dish , pour 1 cup blue pea flower rice mixture and place over large pan with boiling water . Cover it and cook for 6-7 minutes. Remove the cover and check the first layer is set or not . If it is set than pour 1 cup of coconut and rice mixture . Again cover it and cook for 6-7 minutes . Remove the cover and check the second layer is set or not . Now pour the final layer of blue pea flower rice mixture on top. Cover it and cook for 10-12 minutes or until the rice mixture leaves the sides of pan. 

Remove the pan from boiling water pan and keep it cool. Once cooled down cut into your desired size and serve with hot cup of tea.
