Hummus

At first !! What is hummus ?? In case this is new to you , it’s a classic dish from Middle East or Mediterranean countries primarily made of chickpeas, tahini paste ( sesame paste), garlic, salt and lemon juice. Different countries add their own staple. Nowadays hummus is so popular worldwide , so you will get million variations.







I love about making homemade hummus is that most of the ingredients can be found in your own pantry, making this an east impromptu dip for parties, game day , high tea or weekend dinner. 

I know that hummus making opinions  on internet are very passionate. So, everyone makes hummus of their own . If you want to try the easiest , creamiest, dreamiest, smoothest most flavourful hummus ever, here I will introduce you my way of making hummus at home rather than going for store bought one . Tahini paste is arguably the  most prominent flavour in hummus, others goes with store bought one but  I always  love to use homemade sesame paste instead of buying and simply pureeing your hummus an extra few minutes in the food processor helps in achieving that perfectly creamy , light whipped texture that we were going for . 




Ingredients :

2 cups chickpeas , boiled / 1 can chickpeas ( store bought ) , fresh is better 
1/3 cup sesame paste / tahini paste 
4-5 cloves garlic , you can add more if you want strong garlicky flavour 
1 lemon juice
Salt to taste 
Olive oil, some into the olive itself and extra to drizzle on top for serving. 
Cold water to get extra smooth texture. 


How to make 

First purée sesame paste/ tahini paste , garlic, lemon juice ,olive oil  water and salt  in a food processor until  smooth. 

Now add in the chickpeas ,  purée for 3/4 minutes until smooth . If the hummus seems to be thick feel free to add extra water to make it silky smooth .

Taste and season with extra salt or lemon juice if needed. 

Transfer it to a serving bowl and garnish it with your choice of topping . Drizzle some olive oil on top and serve .

I have garnished with chopped chives and chives flower, sprinkled red chili powder , dash of ground black pepper and drizzle olive oil on top. 

Enjoy it with falafels / lavas / pita breads / fresh veggies / crackers !!
