Stuffed Cucumber

Summer is here, and A slice of cucumber, A handful of berries, A bowl of yogurt, A glass of iced tea are all classic summertime foods, and as it turns out, They are also great choices to keep you healthy and cool. Usually I cook whatever's  in the fridge with a little twist . 

In a hot sunny day, when guests knocked at your door and you want to serve them scrumptious dish, so I decided to make something no bake no cook dish. I made this stuffed cucumber  to fill tummy as well as to navigate the summer heat. 




Ingredients:

(i) 250 gm  shrimps
(ii) 2 long cucumbers
(iii) 1 tin cream cheese
(iv) 1/2 cup fresh cream
(v) salt to taste
(vi)  1 teaspoon red chili powder 
(vii) Spring onion chopped 
(viii) 1 tomato chopped
(ix) Red pepper sauce

Directions: 

First clean cucumbers, peel it  and cut off ends of cucumber and slice into 2 inch rounds,  scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice.

 In a  medium size bowl combine  chopped tomato, cream cheese, fresh cream, boiled shrimps, red pepper sauce. Mix in boiled shrimps, salt, combining thoroughly.


Fill each slice  with this mixture and sprinkle red chili powder on top. Garnish with chopped spring onion.
